Blanching is a cooking technique that enhances the color, flavor, and texture of vegetables, and it's particularly important for green beans in this recipe. Begin by bringing a large pot of salted water to a rolling boil. The salt not only seasons the beans but also helps maintain their vibrant green color. Once the water is boiling, carefully add the trimmed green beans and let them cook for about 3 to 5 minutes, depending on their size. The goal is to achieve a bright green color while keeping the beans crisp-tender.

Ingredients

1 pound fresh green beans, trimmed

1/2 cup sliced almonds

3 tablespoons unsalted butter

2 cloves garlic, minced

Juice of 1 lemon

Zest of 1 lemon

Salt, to taste

Freshly ground black pepper, to taste

1 tablespoon chopped fresh parsley, for garnish (optional)

Instructions

Blanch the Green Beans: Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until they are bright green and tender-crisp. Immediately drain and transfer them to a bowl of ice water to stop the cooking process. Let them sit for about 5 minutes, then drain again.

Toast the Almonds: In a large skillet over medium heat, add the sliced almonds. Toast them for about 3-5 minutes, stirring frequently, until they are golden brown and fragrant. Be careful not to burn them. Remove the almonds from the skillet and set aside.

Sauté the Garlic: In the same skillet, add the butter over medium heat. Once melted, add the minced garlic and sauté for 1 minute until fragrant, making sure not to let it brown.

Add the Green Beans: Add the blanched green beans to the skillet and toss them in the garlic butter. Cook for another 2-3 minutes until heated through.

Finish the Dish: Squeeze the lemon juice over the green beans, add the lemon zest, and season with salt and freshly ground black pepper, adjusting to taste.

Combine Almonds and Serve: Finally, fold in the toasted almonds. Garnish with chopped fresh parsley if desired. Serve immediately and enjoy!
