2 cups mashed potatoes (preferably cold)

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1 large egg

1/2 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup breadcrumbs (for coating)

Oil for frying (vegetable or canola)

Fresh chives or parsley for garnish (optional)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the cold mashed potatoes, shredded cheddar cheese, grated Parmesan, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined and smooth.

    Shape the Bites: Using your hands, take small portions of the potato mixture and shape them into bite-sized balls or patties, about 1 to 2 inches in diameter. Place them on a parchment-lined tray.

      Coat the Bites: Set up a breading station: Place the flour in one shallow dish and the breadcrumbs in another. Roll each potato bite in flour, shaking off excess, then dip it back into the mixture to coat them in breadcrumbs.

        Fry the Bites: Heat about 2 inches of oil in a deep pan or pot over medium-high heat until it reaches 350°F (175°C). Carefully drop a few potato bites into the hot oil at a time, being cautious not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

          Serve: Plate the Golden Cheesy Mashed Potato Bites while hot, garnished with fresh chives or parsley if desired. Serve with your favorite dipping sauce, like sour cream or ranch dressing.
