1 lb ground chicken

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 small onion, finely chopped

1/4 cup fresh parsley, chopped (or 2 tbsp dried parsley)

1 large egg

1 tsp salt

1/2 tsp black pepper

1 tsp Italian seasoning

1/4 cup milk

1/4 cup ketchup (for topping)

1 tbsp olive oil (for sautéing onions)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

    Sauté Onions: In a small skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Remove from heat and let it cool slightly.

      Prepare the Mixture: In a large mixing bowl, combine ground chicken, sautéed onions, breadcrumbs, grated Parmesan cheese, minced garlic, parsley, egg, milk, salt, black pepper, and Italian seasoning. Mix well until all ingredients are fully incorporated.

        Shape the Meatloaves: Divide the mixture into 4 equal portions and shape each portion into a small loaf (about the size of your palm). Place them on the prepared baking sheet or in the loaf pan.

          Topping: Spread a spoonful of ketchup over the top of each meatloaf for added flavor and moisture.

            Bake: Bake in the preheated oven for 25-30 minutes or until the internal temperature of the meatloaves reaches 165°F (75°C) and they are golden brown on top.

              Rest & Serve: Let the meatloaves rest for about 5 minutes before slicing. Serve warm with your favorite sides, such as mashed potatoes or a mixed green salad.
