Garlic Parmesan Chicken and Potatoes (One-Pan Dinner)

4 boneless, skinless chicken thighs

1 lb baby potatoes, halved

1/4 cup unsalted butter, melted

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 tsp dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

2 cups fresh spinach (optional, for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small bowl, whisk together the melted butter, minced garlic, grated Parmesan cheese, dried Italian herbs, salt, and pepper.

      In a large bowl, combine the halved baby potatoes with half of the garlic Parmesan mixture, tossing to coat evenly.

        Arrange the coated potatoes in a single layer on one side of a large baking sheet lined with parchment paper.

          Place the chicken thighs on the other side of the baking sheet. Brush the remaining garlic Parmesan mixture over the chicken thighs.

            Season the chicken with extra salt and pepper if desired.

              Bake in the oven for about 25-30 minutes or until the chicken is cooked through (internal temperature of 165°F) and the potatoes are tender and golden brown.

                Optional: During the last 5 minutes of baking, add the fresh spinach around the chicken and potatoes to wilt.

                  Once baked, remove from the oven and let rest for a few minutes before garnishing with chopped fresh parsley.

                    Serve warm, enjoying the delicious combination of flavors.
