1 lb boneless, skinless chicken thighs

3 cups fresh broccoli florets

2 cups fresh spinach leaves

4 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon soy sauce

1 teaspoon honey

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1 tablespoon lemon juice

Zest of 1 lemon

Chopped fresh parsley or basil for garnish

Prepare the Chicken: In a bowl, mix the olive oil, soy sauce, honey, minced garlic, red pepper flakes, lemon juice, and lemon zest. Add the chicken thighs and marinate for at least 30 minutes in the refrigerator to enhance flavor.

    Cook the Chicken: Heat a large skillet over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and sear the chicken thighs in the skillet for about 5-7 minutes on each side or until beautifully golden brown and cooked through. Remove from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the leftover marinade along with the broccoli florets. Sauté for about 3-4 minutes. Add a splash of water to help steam the broccoli, if necessary.

        Add Spinach: Once the broccoli is bright green and tender, add the spinach and continue to sauté for another 2-3 minutes until wilted.

          Combine and Serve: Slice the cooked chicken and add it back to the skillet with the vegetables. Toss everything gently to combine and heat through. Adjust seasoning with salt and pepper as needed.

            Garnish: Remove from heat, garnish with chopped parsley or basil, and serve warm.
