Ingredients
  

2 boneless ribeye steaks (about 1-inch thick)

Salt and pepper, to taste

3 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 cup baby carrots, halved

1 bell pepper (any color), sliced

1 medium zucchini, sliced

1 tablespoon olive oil

Lemon wedges, for serving (optional)

Instructions
 

Prepare the Veggies: In a large bowl, toss the baby carrots, bell pepper, and zucchini with olive oil, salt, and pepper. Spread the veggies on a baking sheet in a single layer.

    Preheat Oven: Preheat your oven to 400°F (200°C) for roasting the veggies.

      Roast the Veggies: Roast the veggies in the oven for about 20-25 minutes, or until tender and slightly caramelized. Toss halfway through for even cooking.

        Season the Steaks: While the veggies are roasting, season the ribeye steaks liberally with salt and pepper on both sides.

          Sear the Steaks: In a large skillet over medium-high heat, melt 1 tablespoon of butter. Once hot, add the steaks and sear them for 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.

            Add Butter and Herbs: Lower the heat to medium-low. Add the remaining 2 tablespoons of butter, minced garlic, parsley, and thyme to the pan. Spoon the melting garlic butter over the steaks as they cook for another minute.

              Rest the Steaks: Once the steaks are done, remove them from the skillet and let them rest for about 5 minutes.

                Serve: Slice the steaks against the grain and plate them alongside the roasted veggies. Drizzle the garlic butter from the skillet over the top and serve with lemon wedges, if desired.
