1 lb large shrimp, peeled and deveined

4 medium zucchinis, spiralized into noodles

4 tablespoons unsalted butter

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 lemon, juiced

1/4 cup freshly grated Parmesan cheese

2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

Prepare the Zoodles: Using a spiralizer, turn the zucchinis into noodles (zoodles). Lay them on a paper towel and sprinkle lightly with salt to draw out excess moisture; let them sit for about 10 minutes.

    Cook the Shrimp: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and red pepper flakes, sauté for about 1 minute until fragrant. Add the shrimp, season with salt and pepper, and cook until they turn pink and opaque, about 2-3 minutes per side. Remove the shrimp and set aside.

      Sauté the Zoodles: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the drained zoodles. Toss them quickly for about 2-3 minutes until slightly softened but still al dente.

        Combine and Finish: Return the shrimp to the skillet, add lemon juice, and toss everything gently to combine. Cook for an additional 1-2 minutes, allowing the flavors to meld. Remove from heat.
