Garlic Butter Shrimp and Sausage Skillet Pasta

Ingredients
  

8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

8 oz smoked sausage, sliced into rounds

4 tbsp unsalted butter

4 cloves garlic, minced

1/2 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

1 tsp red pepper flakes (adjust to taste)

Salt and pepper, to taste

Juice of 1 lemon

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté Sausage: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the sliced sausage and sauté for about 5 minutes or until browned and heated through. Remove sausage from the skillet and set aside.

      Cook Shrimp: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant. Add the shrimp to the skillet, seasoning with salt and pepper. Cook for 2-3 minutes until shrimp turn pink and opaque. Remove shrimp and set aside with the sausage.

        Combine Ingredients: In the same skillet, add the cherry tomatoes, tossing them for about 2 minutes until softened. Add the cooked pasta, sausage, and shrimp back to the skillet.

          Add Flavor: Drizzle with lemon juice, and if the pasta looks dry, add reserved pasta water a little at a time while tossing until desired creaminess is reached. Toss in chopped parsley and adjust seasoning with salt and pepper as needed.

            Serve: Divide into bowls, sprinkle with grated Parmesan cheese, and garnish with additional parsley if desired.
