Ingredients
  

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 medium zucchinis, sliced into half-moons

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Juice of 1 lemon

Grated Parmesan cheese (optional, for serving)

Instructions
 

Prepare the Chicken: Season the chicken pieces with salt, pepper, Italian seasoning, and paprika. Mix well to ensure the chicken is evenly coated with the spices.

    Heat the Skillet: In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the seasoned chicken pieces and cook for about 5-7 minutes, or until golden brown and cooked through. Stir occasionally to ensure even cooking. Once cooked, remove the chicken from the skillet and set aside.

      Sauté Garlic and Zucchini: In the same skillet, add the remaining 2 tablespoons of butter. When melted, add minced garlic and sauté for about 30 seconds until fragrant. Then, add the sliced zucchini. Cook for another 3-4 minutes, stirring occasionally, until the zucchini is tender but still has a slight crunch.

        Combine and Finish: Return the cooked chicken to the skillet with the zucchini. Squeeze the lemon juice over the mixture and stir everything together for another 1-2 minutes to combine the flavors. Adjust seasoning with more salt and pepper if needed.

          Serve: Garnish with chopped fresh parsley and sprinkle with grated Parmesan cheese if using. Serve warm and enjoy!
