1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup broccoli florets

1 cup bell peppers (red, yellow, and green), sliced

1 cup cherry tomatoes, halved

1/4 cup chicken broth (or white wine)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt, pepper, and smoked paprika. Add the chicken to the skillet and cook for about 5-7 minutes, or until golden brown and cooked through. Transfer the chicken to a plate and set aside.

    In the same skillet, reduce the heat to medium and add 2 tablespoons of butter. Once melted, add the minced garlic and thyme. Sauté for about 1-2 minutes until the garlic is fragrant, being careful not to burn it.

      Add the broccoli and bell peppers to the skillet. Cook for about 5 minutes, stirring frequently, until the vegetables are tender but still crisp.

        Return the cooked chicken to the skillet. Pour in the chicken broth (or white wine) and stir to combine. Add the cherry tomatoes and the remaining 2 tablespoons of butter to the skillet, mixing well until everything is heated through and the veggies are well coated.

          Taste and adjust seasonings with additional salt and pepper, if needed. Remove from heat and garnish with fresh parsley before serving.
