8 ounces spaghetti

2 cups fresh cherries, pitted and halved

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon chili flakes (adjust to taste)

1/2 cup crumbled goat cheese

1/4 cup fresh basil, chopped

1/4 teaspoon salt

1/4 teaspoon black pepper

Zest of 1 lemon

Juice of 1 lemon

Optional: toasted pine nuts for garnish

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1/2 cup of pasta cooking water, then drain the spaghetti and set aside.

    Sauté Garlic and Cherries: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant (be careful not to burn it). Add the halved cherries and chili flakes, sautéing for another 3-4 minutes until the cherries soften and start to release their juices.

      Combine Spaghetti with Cherry Mixture: Add the cooked spaghetti to the skillet with the cherry mixture. Toss to combine. If the dish seems dry, add a bit of the reserved pasta water to loosen it up.

        Add Cheese and Seasoning: Remove the skillet from heat and stir in the crumbled goat cheese, chopped basil, salt, black pepper, lemon zest, and lemon juice. Toss everything together until well incorporated.

          Serve: Plate the cherry spaghetti and sprinkle with additional basil, goat cheese, and toasted pine nuts if using. Serve immediately while warm.
