1 cup cottage cheese (full-fat or low-fat)

4 large eggs, separated

1/4 teaspoon cream of tartar

1/2 teaspoon baking powder

1/4 teaspoon salt

1 tablespoon garlic powder (optional, for flavor)

1 tablespoon fresh herbs (e.g., rosemary or thyme, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.

    Prepare the Mixture: In a medium bowl, blend the cottage cheese until smooth. You can use a blender or a hand mixer for this.

      Separate Eggs: In another bowl, separate the egg whites from the yolks. Add the egg yolks to the cottage cheese mixture, along with the baking powder, salt, and optional garlic powder and herbs. Mix until everything is well combined.

        Whip Egg Whites: In a large mixing bowl, beat the egg whites with the cream of tartar using an electric mixer until stiff peaks form. This will take about 5-7 minutes.

          Fold Mixtures Together: Gently fold the cottage cheese mixture into the whipped egg whites. do this carefully to retain as much air as possible, which will make the bread fluffy.

            Shape the Bread: Using a spoon or a spatula, scoop the mixture onto the prepared baking sheet, forming rounds (about 2-3 inches in diameter) about 1-inch apart. You can flatten them slightly if you wish.

              Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the tops are golden and slightly firm to the touch.

                Cool and Serve: Allow the cloud bread to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy them plain or with your favorite spreads!
