Ingredients

1 cup cottage cheese (preferably full-fat)

3 large eggs, separated

1/4 cup almond flour

1/4 teaspoon cream of tartar

1/2 teaspoon garlic powder (optional)

1/2 teaspoon onion powder (optional)

Salt, to taste

Pepper, to taste

Instructions

Preheat the Oven: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.

Blend Ingredients: In a blender or food processor, combine the cottage cheese, egg yolks, almond flour, garlic powder, onion powder, salt, and pepper. Blend until smooth and well combined.

Beat Egg Whites: In a separate clean mixing bowl, add the egg whites and cream of tartar. Using an electric mixer, beat the egg whites on medium speed until stiff peaks form (about 3-5 minutes).

Fold Mixtures Together: Carefully fold the cottage cheese mixture into the beaten egg whites using a spatula. Be gentle to keep the mixture light and airy.

Spoon onto Baking Sheet: Using a spoon or ice cream scoop, drop rounds of the mixture onto the prepared baking sheet, leaving space between each round. Use the back of the spoon to flatten them slightly.

Bake: Bake in the preheated oven for 25-30 minutes, or until the cloud bread is golden brown and firm to the touch.

Cool and Serve: Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Serve as a bread substitute or as a light snack.
