2 whole English muffins, split in half

4 large eggs

1 cup shredded mozzarella cheese

½ cup cherry tomatoes, halved

½ cup cooked and crumbled breakfast sausage or diced ham (optional)

¼ cup bell peppers, diced

¼ cup red onion, finely chopped

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C).

    Prepare the English muffins by placing the split halves on a baking sheet, cut side up. Drizzle with olive oil and lightly season with salt and pepper.

      Spread the cheese evenly over each English muffin half.

        In a bowl, whisk together the eggs with a pinch of salt and pepper until well combined.

          Pour the eggs evenly over the cheese-covered muffin halves.

            Add your toppings: Scatter the cherry tomatoes, breakfast sausage or ham (if using), bell peppers, and red onion over the eggs.

              Bake in the preheated oven for 12-15 minutes, or until the eggs are set and the cheese is bubbly and golden.

                Remove from the oven and let cool for a minute. Garnish with fresh basil or parsley if desired.

                  Serve warm and enjoy your delicious breakfast pizza!
