2 English muffins, split

4 large eggs

1/2 cup shredded mozzarella cheese

1/4 cup crumbled feta cheese

1/2 cup cherry tomatoes, halved

1/4 cup cooked and crumbled turkey bacon or sausage (optional)

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

Fresh basil or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Muffins: Place the split English muffins cut-side up on a baking sheet. Drizzle olive oil lightly over each half.

      Cook the Eggs: In a medium bowl, crack the eggs and whisk them until well combined. Add garlic powder, onion powder, salt, and pepper to taste. Pour this mixture into a non-stick skillet over medium heat. Stir continuously until the eggs are just set, about 2-3 minutes.

        Assemble the Pizzas: On each half of the English muffin, sprinkle a layer of mozzarella cheese. Add a spoonful of scrambled eggs on top of the cheese. Next, distribute the cherry tomatoes and optional cooked meat evenly among the muffins. Finally, sprinkle crumbled feta over the top of each muffin.

          Bake: Place the assembled English muffin breakfast pizzas in the preheated oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.
