Ingredients
  

1 pound ground beef or turkey

1 packet taco seasoning (about 1.25 oz)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 cup cooked rice (white or brown)

1 cup shredded cheddar cheese (or a taco blend)

1 cup salsa

1 cup tortilla chips, crushed

2 green onions, sliced

Sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, cook the ground beef or turkey until it's browned and no longer pink, breaking it up with a spoon as it cooks. Drain excess fat if necessary.

      Season the Meat: Add the taco seasoning to the skillet and stir until the meat is well-coated. If needed, add a splash of water according to the seasoning package instructions and mix until combined.

        Combine Ingredients: In a large mixing bowl, combine the seasoned meat, black beans, corn, diced tomatoes (with juices), cooked rice, and salsa. Mix well until evenly combined.

          Assemble the Casserole: Spread the mixture evenly in a 9x13 inch baking dish. Sprinkle the crushed tortilla chips on top, followed by the shredded cheese.

            Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
