Ingredients

2 cups fresh strawberries, hulled and diced

1 cup granulated sugar

1/2 cup plain yogurt (or sour cream)

1/4 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

Instructions

Preheat Your Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.

Prepare the Strawberry Mixture: In a bowl, gently mix the diced strawberries with 1/4 cup of sugar. Let them sit for about 10 minutes to release their juices.

Mix Wet Ingredients: In a large mixing bowl, combine the yogurt, oil, remaining sugar, eggs, and vanilla extract. Whisk until smooth and creamy.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.

Combine Mixtures: Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; it’s okay if a few lumps remain. Gently fold in the strawberries and their juice.

Pour into the Pan: Transfer the batter to your prepared loaf pan, spreading it evenly.

Bake: Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Once baked, remove from the oven and let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Slice and Enjoy: Once cooled, slice the bread and enjoy it fresh. It’s perfect for breakfast, as a snack, or even as a sweet treat!
