2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

2 large eggs

1 3/4 cups milk (whole or almond for a dairy-free option)

1/2 cup vegetable oil (or melted coconut oil)

1 teaspoon vanilla extract

Instructions
 

Preheat your waffle iron according to the manufacturer's instructions.

    In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.

      In another bowl, beat the eggs and then stir in the milk, oil, and vanilla extract until well mixed.

        Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; some lumps are fine!

          Lightly grease the preheated waffle iron with non-stick spray if necessary.

            Pour the batter onto the center of the waffle iron, using about 1 cup or the amount recommended by your waffle iron's manual.

              Close the lid and cook until the waffles are golden brown and crispy, usually around 4-5 minutes.

                Remove the waffles carefully and repeat with the remaining batter.
