1 cup rolled oats

2 cups almond milk (or any milk of choice)

1 medium carrot, finely grated

1/4 cup raisins or chopped dates

1/4 cup crushed walnuts or pecans

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp nutmeg

1 tbsp maple syrup or honey (optional)

Pinch of salt

Cream cheese or yogurt for topping (optional)

Prepare the Base: In a medium saucepan, combine the rolled oats, almond milk, grated carrot, raisins (or dates), vanilla extract, ground cinnamon, ground ginger, nutmeg, and a pinch of salt.
