Ingredients
  

1 pound breakfast sausage, crumbled

6 large eggs

2 cups milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

4 cups frozen hash browns, thawed

1 cup shredded cheddar cheese

1/2 cup diced green bell pepper (optional)

1/2 cup diced onion (optional)

Fresh chives or parsley for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C).

    Cook the sausage: In a large skillet over medium heat, cook the crumbled breakfast sausage until browned and fully cooked, about 5-7 minutes. Drain excess fat and set aside.

      Mix the eggs: In a large mixing bowl, whisk together eggs, milk, garlic powder, onion powder, paprika, salt, and pepper until well combined.

        Combine the ingredients: In a greased 9x13 inch baking dish, layer the thawed hash browns evenly across the bottom. Sprinkle the cooked sausage over the hash browns. If using, add the diced green bell pepper and onion.

          Add cheese and egg mixture: Pour the egg mixture over the sausage and hash browns. Top with shredded cheddar cheese.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then remove the foil and bake for another 15-20 minutes, or until the cheese is bubbly and golden, and the casserole is set in the middle.

              Serve: Allow the casserole to cool for a few minutes before slicing. Garnish with fresh chives or parsley if desired. Serve warm.
