1 cup shredded cheddar cheese

4 large eggs

1/2 cup diced bell peppers (any color)

1/4 cup chopped fresh spinach

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

Optional toppings: salsa, sour cream, or avocado slices

Preparation of Ingredients: Begin by gathering all ingredients. Dice the bell peppers and chop the spinach.

    Whisk the Eggs: In a medium bowl, crack the eggs. Add salt and black pepper, and whisk until well combined.

      Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced bell peppers and sauté for 2-3 minutes until slightly softened. Stir in the chopped spinach and cook for another minute until wilted.

        Cook the Eggs: Pour the whisked eggs into the skillet with the sautéed vegetables. Cook gently, stirring occasionally, until the eggs are scrambled and fully cooked, about 3-4 minutes.

          Assemble the Quesadillas: On a separate large skillet (or clean the one you've just used), place a tortilla over medium heat. Evenly sprinkle 1/4 cup of shredded cheddar cheese on one half of the tortilla. Spoon a quarter of the scrambled egg and veggie mixture over the cheese, then fold the tortilla over to create a half-moon shape.

            Cook Until Golden: Cook the quesadilla for about 2-3 minutes on each side, or until golden brown and the cheese is melted. Remove from the skillet and repeat with the remaining tortillas, cheese, and egg mixture.
