Ingredients
  

2 medium zucchinis, chopped

4 cups fresh spinach, washed and roughly chopped

1 medium onion, diced

2 cloves garlic, minced

4 cups vegetable broth

1 medium potato, peeled and diced

1 tablespoon olive oil

Salt and pepper, to taste

1/4 teaspoon nutmeg (optional)

1 tablespoon lemon juice

Croutons and fresh herbs for garnish (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Add minced garlic and cook for another minute until fragrant.

      Stir in the chopped zucchini and diced potato. Cook for 3-4 minutes, stirring occasionally.

        Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and simmer for about 15-20 minutes or until the vegetables are tender.

          Add the fresh spinach to the pot and stir. Cook for an additional 3-5 minutes until the spinach is wilted.

            Using an immersion blender, carefully puree the soup until smooth; alternatively, transfer the soup in batches to a regular blender (be cautious of the hot liquid).

              Season the soup with salt, pepper, nutmeg (if using), and lemon juice. Blend again if desired to combine the flavors.

                Serve hot, topped with croutons and a sprinkle of fresh herbs if desired.
