4 large russet potatoes, peeled and cubed

1 medium onion, diced

3 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream or half-and-half

1 cup shredded cheddar cheese (plus more for topping)

2 teaspoons dried thyme

1 teaspoon paprika

Salt and pepper to taste

4 slices of cooked bacon, crumbled (optional for garnish)

Chopped green onions or chives (optional for garnish)

Instructions
 

Prep the Vegetables: In the slow cooker, combine the cubed potatoes, diced onion, and minced garlic.

    Add the Liquids: Pour in the vegetable or chicken broth, ensuring that all the vegetables are submerged.

      Season the Soup: Stir in the dried thyme, paprika, salt, and pepper. Mix well to combine all the flavors.

        Cook: Cover the slow cooker and set it on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.

          Blend the Soup: Once cooked, use an immersion blender to puree the soup until you reach your desired consistency. (You can also transfer batches of soup to a regular blender, but be careful with hot liquids.)
