Potato pancakes have a long and varied history that spans numerous cultures around the world. The concept of grating potatoes and frying them into cakes can be traced back to Eastern European Jewish communities, where latkes are a staple during Hanukkah. Traditionally made with grated potatoes, onions, and eggs, these latkes are fried until golden brown and served with applesauce or sour cream, symbolizing the miracle of the oil in the Hanukkah story.

Ingredients

4 medium potatoes, peeled and grated

1 small onion, finely chopped

2 large eggs

1/2 cup all-purpose flour

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1/4 teaspoon paprika (optional)

Vegetable oil, for frying

Sour cream or applesauce (for serving)

Instructions

Prep the Potatoes: After grating the potatoes, place them in a clean kitchen towel or cheese cloth and squeeze out as much moisture as possible. This step helps ensure the pancakes are crispy.

Mix Ingredients: In a large mixing bowl, combine the grated potatoes, chopped onion, eggs, flour, salt, pepper, garlic powder, and paprika. Mix until well combined.

Heat Oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat until it shimmers.

Form the Pancakes: Using a spoon or your hands, scoop about 1/4 cup of the potato mixture and form it into a patty. Carefully place it into the hot oil. Repeat for as many pancakes as will fit in the skillet without overcrowding.

Fry: Cook each pancake for about 3-4 minutes on each side or until golden brown and crispy. Adjust the heat as necessary to prevent burning.

Drain: Once cooked, transfer the pancakes to a paper towel-lined plate to absorb excess oil.

Serve: Enjoy immediately with a dollop of sour cream or applesauce on the side.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4 (makes about 8 pancakes)
