Ingredients
  

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

4 cups vegetable broth

2 cups kale, chopped

1 cup spinach leaves

1 cup zucchini, chopped

1 cup green beans, trimmed and cut into pieces

1 cup peas (fresh or frozen)

1 tablespoon fresh lemon juice

Salt and pepper to taste

1 teaspoon dried thyme

1 teaspoon ground cumin

Fresh herbs for garnish (like cilantro or parsley)

Instructions
 

Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

    Pour in the vegetable broth and bring to a simmer. Add the chopped kale and zucchini, and cook for about 5 minutes.

      Add the green beans and peas to the pot. Continue to simmer for another 5-7 minutes until all the vegetables are tender.

        Stir in the fresh spinach leaves, dried thyme, ground cumin, lemon juice, salt, and pepper. Cook for an additional 2 minutes until the spinach wilts.

          Remove the soup from heat and allow it to cool slightly before blending. You can use an immersion blender for a smoother texture or transfer it in batches to a blender until desired consistency is achieved.

            Taste and adjust seasoning if necessary. Serve warm, garnished with fresh herbs.
