Ingredients
  

4 cod fillets (about 6 ounces each)

3 tablespoons soy sauce

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

2 tablespoons honey

1 tablespoon sesame oil

1 tablespoon rice vinegar

1/2 teaspoon red pepper flakes (optional)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Salt and pepper, to taste

Instructions
 

In a medium bowl, whisk together the soy sauce, grated ginger, minced garlic, honey, sesame oil, rice vinegar, and red pepper flakes (if using). This will be your marinade.

    Place the cod fillets in a shallow dish and pour the marinade over them. Ensure that the fillets are well-coated. Cover the dish and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

      Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

        Remove the cod from the marinade and place the fillets on the prepared baking sheet. Season with salt and pepper to taste.

          Bake the cod in the preheated oven for about 15-20 minutes or until the fish flakes easily with a fork and is opaque in color.

            While the cod is baking, you can simmer the remaining marinade in a small saucepan over medium heat for about 5-7 minutes until slightly thickened. This will serve as a sauce.

              Once the cod is done baking, drizzle the thickened marinade over the fillets.

                Garnish with chopped green onions and sesame seeds before serving.
