1 lb ground pork or chicken

4 cups coleslaw mix (cabbage and shredded carrots)

3 green onions, finely chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 teaspoon rice vinegar

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Sesame seeds for garnish (optional)

Instructions

In a large skillet over medium heat, add the ground pork or chicken. Cook until browned and fully cooked, breaking it apart with a spatula as it cooks.

Once the meat is cooked through, add the minced garlic and ginger. Sauté for about 1-2 minutes until fragrant.

Stir in the coleslaw mix, green onions, soy sauce, sesame oil, rice vinegar, and red pepper flakes if using. Cook for an additional 5-7 minutes, stirring frequently, until the cabbage is tender.

Taste and season with salt and pepper as desired.

Remove from heat and garnish with sesame seeds if desired. Serve hot.
