2 cans (15 oz each) black beans, rinsed and drained

1 medium onion, diced

4 cloves garlic, minced

1 green bell pepper, diced

2 tsp cumin

1 tsp dried oregano

1 bay leaf

1 cup chicken or vegetable broth

1 tbsp olive oil

Salt and pepper, to taste

1 tbsp red wine vinegar

Fresh cilantro, for garnish

Sauté Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and green bell pepper. Sauté for about 5 minutes, until the onion becomes translucent.

    Add Garlic and Spices: Stir in the minced garlic, cumin, oregano, and bay leaf. Cook for an additional 1-2 minutes until fragrant.

      Combine Beans and Broth: Add the rinsed black beans to the skillet, mixing well with the sautéed vegetables. Pour in the chicken or vegetable broth, stirring to combine.

        Simmer: Bring the mixture to a gentle simmer. Let it cook uncovered for about 15-20 minutes, stirring occasionally. This allows the flavors to meld and the beans to thicken slightly.

          Adjust Seasoning: After simmering, taste the beans and season with salt, pepper, and red wine vinegar to your liking. Remove the bay leaf before serving.

            Serve: Spoon the black beans into bowls and garnish with fresh cilantro. Enjoy them with rice, tortillas, or as a side dish!
