250g rice noodles

300g chicken breast, thinly sliced

2 tablespoons coconut oil (or vegetable oil)

2 teaspoons soy sauce

1 teaspoon paprika

Salt and pepper, to taste

1 cup shredded carrots

1 red bell pepper, thinly sliced

1 cucumber, julienned

2 green onions, chopped

Fresh cilantro, for garnish

Sesame seeds, for garnish

Peanut Sauce:

1/2 cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon honey or maple syrup

1 tablespoon rice vinegar (or lime juice)

1 teaspoon sriracha (optional, for heat)

4-5 tablespoons warm water (to thin)

Instructions
 

Prepare Noodles: Cook the rice noodles according to package instructions. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

    Cook Chicken: In a large skillet or wok, heat coconut oil over medium-high heat. Add the sliced chicken breast, soy sauce, paprika, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove from heat and let cool slightly.

      Make Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, honey or maple syrup, rice vinegar (or lime juice), and sriracha (if using). Gradually add warm water to achieve your desired sauce consistency. Mix until smooth.

        Assemble Salad: In a large mixing bowl, combine the cooked rice noodles, chicken, shredded carrots, red bell pepper, cucumber, and green onions.
