6 large eggs

1/2 cup milk (or a dairy-free alternative)

1/2 cup diced bell peppers (any color)

1/4 cup diced onion

1 cup fresh spinach, chopped

1/2 cup shredded cheese (cheddar or your choice)

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp garlic powder (optional)

1/2 tsp paprika (optional)

Cooking spray or muffin liners

Instructions
 

Preheat your oven to 350°F (175°C). If you're using muffin liners, place them in a muffin tin or spray the tin with cooking spray.

    In a large mixing bowl, whisk together the eggs and milk until well combined. Add the salt, black pepper, garlic powder, and paprika (if using), and mix again.

      Incorporate the vegetables: Add the diced bell peppers, onions, and chopped spinach to the egg mixture. Stir until the veggies are evenly distributed.

        Fold in the cheese: Add the shredded cheese and gently mix until everything is combined.

          Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full. (You can sprinkle a little extra cheese on top if desired.)

            Bake in the preheated oven for about 18-20 minutes or until the egg muffins are puffed up and a toothpick inserted in the center comes out clean.

              Allow to cool in the tin for a few minutes before transferring to a wire rack. Serve warm, or store in an airtight container in the refrigerator. Reheat in the microwave before serving.
