1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

1/4 cup bourbon

1/4 cup soy sauce

1/4 cup brown sugar

2 tablespoons apple cider vinegar

2 cloves garlic, minced

1 teaspoon ground ginger

1/2 teaspoon crushed red pepper flakes (optional)

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Sliced green onions, for garnish

Sesame seeds, for garnish

Instructions
 

Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5 minutes. Remove the chicken from the skillet and set it aside.

    Make the Sauce: In the same skillet, lower the heat to medium and add the bourbon, soy sauce, brown sugar, apple cider vinegar, minced garlic, ground ginger, and crushed red pepper flakes (if using). Stir well to combine and bring the mixture to a simmer.

      Combine Chicken and Sauce: Return the browned chicken to the skillet. Stir to coat the chicken in the sauce. Let it cook on medium heat for about 10 minutes, allowing the chicken to absorb the flavors and the sauce to thicken slightly.

        Thicken the Sauce: Mix the cornstarch with water to create a slurry, then add it to the skillet. Stir constantly for another 2-3 minutes until the sauce thickens to your desired consistency.
