4 boneless, skinless chicken thighs

2 medium zucchinis, sliced into half-moons

1 tablespoon olive oil

2 teaspoons Italian seasoning

3 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

¼ teaspoon red pepper flakes (optional, for heat)

½ cup cherry tomatoes, halved

Fresh basil leaves for garnish (optional)

Grated Parmesan cheese for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chicken: In a mixing bowl, combine the olive oil, Italian seasoning, minced garlic, salt, black pepper, paprika, and red pepper flakes. Add the chicken thighs and coat them evenly with the marinade.

      Prepare the Zucchini: In another bowl, toss the sliced zucchinis and halved cherry tomatoes with a drizzle of olive oil, salt, and pepper.

        Arrange in a Baking Dish: In a large baking dish, place the marinated chicken thighs in the center. Surround them with the seasoned zucchini and cherry tomatoes.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for about 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown.

            Serve: Remove from the oven, let it rest for a few minutes, and serve garnished with fresh basil and grated Parmesan cheese, if desired.
