1 lb boneless, skinless chicken breast, diced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes (preferably with green chilies)

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 tsp ground cumin

1 tsp chili powder

½ tsp smoked paprika

4 cups low-sodium chicken broth

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro, for garnish

Avocado and lime wedges for serving (optional)

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and red bell pepper, cooking until softened, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Cook the Chicken: Add the diced chicken breast to the pot, seasoning with cumin, chili powder, smoked paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

      Combine Ingredients: Pour in the chicken broth, black beans, corn, and diced tomatoes (with their juices). Stir everything together and bring to a boil.

        Simmer the Soup: Reduce the heat to low and let the soup simmer for 20-25 minutes to allow the flavors to meld together. If you prefer a thicker soup, you can mash some of the beans against the side of the pot with a spoon.

          Adjust Seasoning: Taste the soup and adjust seasoning if necessary with more salt, pepper, or spices.
