4 boneless, skinless chicken breasts

1 cup plain Greek yogurt

1 medium cucumber, grated and drained

2 cloves garlic, minced

2 tablespoons fresh lemon juice

1 tablespoon olive oil

1 teaspoon dried dill

1 teaspoon salt

½ teaspoon black pepper

1 ½ cups chicken broth

1 cup uncooked basmati rice

1 cup cherry tomatoes, halved

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, dried dill, salt, and black pepper to make the tzatziki sauce. Reserve a half cup of this mixture for serving later.

      In a baking dish, add the uncooked basmati rice evenly at the bottom. Pour the chicken broth over the rice.

        Place the chicken breasts on top of the rice. Top each chicken breast generously with the tzatziki sauce mixture.

          Scatter the halved cherry tomatoes around the chicken and rice in the baking dish.

            Cover the dish tightly with aluminum foil and bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the rice is tender.

              Remove the foil and let it bake for an additional 5 minutes for a slight golden color on top.

                Once done, remove from the oven and let it sit for 5 minutes before serving.

                  Serve the chicken and rice with the reserved tzatziki sauce on the side and garnish with fresh parsley.
