Ingredients
  

2 cups heavy cream

1 cup whole milk

1/2 cup granulated sugar

6 large egg yolks

1 teaspoon pure vanilla extract

1/4 teaspoon salt

1/4 cup superfine sugar (for the caramelized top)

Instructions
 

Preheat the Oven: Start by preheating your oven to 325°F (165°C).

    Prepare the Cream Mixture: In a medium saucepan, combine the heavy cream and whole milk. Heat over medium heat until the mixture is hot but not boiling. Remove from heat and stir in the vanilla extract and salt.

      Whisk the Yolks and Sugar: In a large mixing bowl, whisk together the egg yolks and granulated sugar until the mixture turns pale and slightly thickened.

        Combine Mixtures: Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly to prevent the eggs from scrambling. This will temper the eggs.

          Strain the Mixture: For a perfectly smooth crème brûlée, strain the mixture through a fine-mesh sieve into another bowl or pitcher to remove any bits of cooked egg.

            Prepare Ramekins: Place six ramekins in a baking dish. Divide the custard mixture evenly among the ramekins.

              Bake in Water Bath: Carefully fill the baking dish with hot water until it reaches halfway up the sides of the ramekins (this will create a gentle steam environment). Bake in the preheated oven for 30-35 minutes, or until the edges are set but the center still has a slight jiggle.

                Cool the Custards: Remove the ramekins from the water bath using tongs, and let them cool to room temperature. Then, refrigerate for at least 4 hours, or preferably overnight.

                  Caramelize the Sugar: Once the custards are chilled, sprinkle an even layer of superfine sugar over the top of each one. Use a kitchen torch to melt and caramelize the sugar until it forms a crispy, golden crust. If you don’t have a torch, you can place them under the broiler for a minute or two, keeping a close watch to avoid burning.

                    Serve and Enjoy: Let the caramelized sugar set for a minute before serving. Enjoy this rich and creamy dessert as a delightful end to any meal!
