Ingredients
  

1 lb boneless, skinless chicken breasts

1 tablespoon olive oil

1 large onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

4 cups chicken broth

1 can (14.5 oz) diced tomatoes with green chilies

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup fresh cilantro, chopped

1 lime, juiced

Optional toppings: avocado, lime wedges, shredded cheese, tortilla chips

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic, red and green bell peppers, and cook for an additional 3-4 minutes, until the peppers soften.

      Season the mixture with chili powder, cumin, smoked paprika, salt, and pepper, stirring to combine.

        Add the chicken breasts to the pot, followed by the chicken broth, diced tomatoes (with their juices), black beans, and corn. Stir well to combine.

          Bring the soup to a boil, then reduce the heat to a simmer. Cover and cook for 25-30 minutes, until the chicken is cooked through.

            Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the soup.

              Stir in the lime juice and half of the chopped cilantro, mixing well. Adjust seasoning if needed.

                Serve hot, garnishing each bowl with the remaining cilantro and, if desired, avocado, lime wedges, shredded cheese, or tortilla chips.
