Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon cumin

½ teaspoon sea salt

¼ teaspoon black pepper

Optional: a pinch of cayenne pepper for heat

Fresh herbs for garnish (e.g., parsley or cilantro)

Instructions

Preheat your oven to 400°F (200°C).

After rinsing the chickpeas, place them on a clean kitchen towel or paper towels and pat them dry thoroughly. Removing excess moisture will help them become crunchier.

In a mixing bowl, combine the dried chickpeas with olive oil, garlic powder, smoked paprika, cumin, sea salt, black pepper, and cayenne (if using). Toss them well until the chickpeas are evenly coated with the oil and spices.

Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Make sure they are not overcrowded to ensure even roasting.

Bake in the preheated oven for 25-30 minutes, shaking the pan halfway through to ensure all sides get golden and crunchy. Keep an eye on them towards the end to prevent burning.

Once they are crispy and golden brown, remove from the oven and let them cool for a few minutes. They will continue to harden as they cool.

For an extra flavor boost, you can sprinkle them with additional sea salt or toss them in a squeeze of lemon juice.

Serve as a snack on their own, or add them as a crunchy topping for salads or soups. Garnish with fresh herbs for a pop of flavor!
