2 cups fresh cheese tortellini

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, diced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil for garnish

Begin by cooking the fresh cheese tortellini according to package directions. Once cooked, drain and set aside.

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing for about 3-4 minutes until the onion becomes translucent.

      Add the diced red bell pepper and continue to sauté for another 2-3 minutes.

        Stir in the halved cherry tomatoes, allowing them to cook down for about 4-5 minutes until they soften and release their juices.

          Toss in the baby spinach and cook until wilted, about 2 minutes.

            Lower the heat and pour in the heavy cream, stirring to combine the vegetables with the cream.

              Add the grated Parmesan cheese, Italian seasoning, and season with salt and pepper. Stir until the cheese melts and the sauce thickens slightly.

                Gently fold the cooked tortellini into the creamy veggie mixture, ensuring they are well coated.

                  Allow everything to heat through for another 2-3 minutes, then remove from heat.

                    Serve warm, garnished with fresh basil and an extra sprinkle of Parmesan cheese if desired.
