Ingredients
  

2 cups butternut squash, peeled and cubed

1 cup carrots, sliced

1 cup sweet potatoes, diced

1 cup celery, chopped

1 can (15 oz) diced tomatoes, undrained

4 cups vegetable broth

1 onion, diced

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon ground cumin

Salt and pepper to taste

1 cup kale, chopped

1 tablespoon olive oil

Fresh parsley for garnish

Instructions
 

In a large bowl, combine the butternut squash, carrots, sweet potatoes, celery, diced tomatoes, and onion.

    In your slow cooker, add the vegetable broth, minced garlic, thyme, cumin, salt, and pepper. Stir well to combine.

      Add the mixed vegetables to the slow cooker and drizzle with olive oil. Gently stir to ensure everything is coated with the broth and seasonings.

        Cover and cook on low for 6-8 hours or on high for 4 hours until all vegetables are tender.

          About 30 minutes before serving, stir in the chopped kale for a fresh touch.

            Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
