3 cups cooked chicken, shredded

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup chicken broth

2 cups frozen mixed vegetables (peas, carrots, corn)

1 cup shredded cheddar cheese

1/2 cup mayonnaise

1 cup crushed buttery crackers (like Ritz)

1/2 cup melted butter

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Casserole Mixture: In a large mixing bowl, combine the cream of chicken soup, sour cream, and chicken broth. Whisk until smooth.

      Add Chicken and Veggies: Mix in the shredded chicken, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper. Stir until all ingredients are well combined.

        Cheese It Up: Fold in 3/4 cup of the shredded cheddar cheese into the mixture, reserving the rest for topping.

          Transfer to Casserole Dish: Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly.

            Prepare the Topping: In a separate bowl, combine the crushed buttery crackers with the melted butter. Stir until the crackers are well coated.

              Add Toppings: Sprinkle the cracker mixture evenly over the casserole. Top with the remaining cheddar cheese.

                Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and bubbly.

                  Garnish: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.
