1 cup egg whites (about 8 large eggs)

1/2 cup spinach, chopped

1/4 cup red bell pepper, finely diced

1/4 cup green onion, sliced

1/2 cup cottage cheese

1/2 cup shredded low-fat cheese (cheddar or mozzarella)

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

Cooking spray or oil for greasing

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or a light drizzle of oil.

    Mix Ingredients: In a large mixing bowl, combine the egg whites, chopped spinach, diced red bell pepper, sliced green onion, cottage cheese, shredded cheese, garlic powder, onion powder, salt, and pepper. Stir until well combined.

      Fill Muffin Tin: Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 of the way full.

        Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg bites are set and slightly golden on top.

          Cool and Serve: Allow the egg white bites to cool for a few minutes before removing them from the muffin tin. Serve warm or store in the refrigerator for a quick, high-protein snack throughout the week.
