1 lb ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 tbsp Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice)

1 cup chicken broth

1 cup diced tomatoes (canned or fresh)

2 tablespoons Worcestershire sauce

2 tablespoons ketchup

Salt and pepper to taste

4 hamburger buns

Optional toppings: sliced jalapeños, shredded lettuce, sliced pickles, and cheddar cheese

Instructions
 

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, cooking until softened, about 3-4 minutes. Add the minced garlic and sauté for an additional minute, until fragrant.

    Cook the Chicken: Push the vegetables to one side of the skillet and add the ground chicken. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

      Season the Mixture: Sprinkle the Cajun seasoning, smoked paprika, and cayenne pepper over the chicken mixture. Stir everything together and cook for another 2 minutes to allow the flavors to combine.

        Simmer the Sauce: Pour in the chicken broth, diced tomatoes, Worcestershire sauce, and ketchup. Stir to combine. Bring the mixture to a simmer and reduce the heat to low. Let it cook for about 15-20 minutes, uncovered, until the sauce thickens. Season with salt and pepper to taste.

          Assemble the Sandwiches: Toast the hamburger buns if desired. Spoon a generous amount of the Cajun chicken mixture onto the bottom half of each bun. Add your choice of toppings, then place the top bun over it.
