Crockpot Tomato and Lentil Soup

2 cups dried green or brown lentils, rinsed

1 can (28 oz) crushed tomatoes

4 cups vegetable broth

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

2 bay leaves

2 cups fresh spinach (optional)

2 tablespoons olive oil

Juice of 1 lemon

Fresh parsley, for garnish

Instructions
 

Prepare the Base: In a skillet over medium heat, heat the olive oil. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables begin to soften. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

    Combine Ingredients: In the crockpot, add the rinsed lentils, sautéed vegetables, crushed tomatoes, vegetable broth, ground cumin, smoked paprika, oregano, salt, black pepper, and bay leaves. Stir well to combine.

      Cook the Soup: Cover the crockpot and set it to low heat for 6-8 hours, or high heat for 3-4 hours. Stir occasionally if possible.

        Final Touches: About 30 minutes before serving, remove the bay leaves. If using, stir in the fresh spinach until wilted. Just before serving, add the lemon juice for brightness.

          Serve: Ladle the soup into bowls, garnish with fresh parsley, and enjoy!
