6 medium-sized russet potatoes, peeled and diced

1 large onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream (or a dairy-free cream alternative)

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt & pepper to taste

1 cup shredded cheddar cheese (plus extra for garnish)

1/4 cup chopped green onions (for garnish)

Optional: 4 strips of cooked bacon, crumbled (for garnish)

Instructions
 

Place the peeled and diced potatoes, chopped onion, and minced garlic into the crockpot.

    Pour in the vegetable broth, then add the onion powder, garlic powder, dried thyme, smoked paprika, salt, and pepper. Stir to combine.

      Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours until the potatoes are tender.

        Once cooked, use an immersion blender to puree the soup to your desired consistency. If you like a chunkier texture, blend only half of the mixture.

          Stir in the heavy cream and shredded cheddar cheese until melted and well combined. Adjust seasoning with more salt and pepper if needed.

            Serve hot, garnished with extra shredded cheese, chopped green onions, and crumbled bacon if desired.
