1 lb boneless, skinless chicken breasts

4 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 medium onion, diced

3 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

2 cups fresh spinach

1 tsp dried Italian herbs (oregano, basil, thyme)

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

1 cup pasta (penne or rotini work well)

Fresh parsley, chopped (for garnish)

Prep the Chicken: Place the chicken breasts at the bottom of the crockpot. Season with salt, pepper, and a sprinkle of Italian herbs.

    Add the Broth and Veggies: Pour in the chicken broth, then add the diced onion, minced garlic, and diced tomatoes. Stir to combine.
