Crockpot Cream Cheese Chicken Chili

Ingredients
  

1 pound boneless, skinless chicken breasts

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies (rotel)

1 onion, diced

2 cloves garlic, minced

2 cups chicken broth

1 package (8 oz) cream cheese

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeƱos

Instructions
 

Prepare Ingredients: Start by dicing the onion and mincing the garlic. Rinse and drain the beans and corn.

    Layer Chicken and Veggies: Place the boneless chicken breasts at the bottom of the crockpot. Top with diced onion, minced garlic, kidney beans, black beans, corn, and diced tomatoes.

      Add Spices and Broth: Sprinkle chili powder, cumin, paprika, salt, and pepper over the top. Pour the chicken broth over the mixture to combine everything.

        Cook on Low: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and easily shreddable.

          Shred and Add Cream Cheese: About 30 minutes before serving, remove the chicken from the crockpot, shred it using two forks, and return it back to the pot. Add the cream cheese to the chili and stir until melted and well mixed.

            Finishing Touches: Taste and adjust seasoning as needed. Allow the chili to simmer for an additional 15-30 minutes for the flavors to meld.
