Ingredients
  

2 cups diced carrots

1 cup diced celery

1 cup chopped onion

2 cups diced potatoes

1 cup green beans, trimmed and cut into bite-sized pieces

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (canned or fresh)

4 cups vegetable broth

2 garlic cloves, minced

1 teaspoon dried thyme

1 teaspoon dried basil

1 bay leaf

Salt and pepper to taste

1 tablespoon olive oil

Optional toppings: chopped fresh parsley, grated Parmesan cheese

Instructions
 

Prepare the Vegetables: Wash and chop all the vegetables into uniform small pieces to ensure even cooking.

    Saute: In a skillet, heat olive oil over medium heat. Add diced onions, carrots, and celery. Sauté for 5-7 minutes or until the onions turn translucent.

      Combine Ingredients: In your crock pot, combine the sautéed vegetables with diced potatoes, green beans, corn, diced tomatoes, garlic, dried herbs (thyme and basil), bay leaf, salt, and pepper.

        Add Broth: Pour in the vegetable broth, ensuring all ingredients are submerged. Stir gently to combine.

          Cook: Cover the crock pot with the lid and set it to cook on low for 6-8 hours or high for 3-4 hours, until the vegetables are tender.

            Finish: Once cooking time is complete, discard the bay leaf. Taste the soup and adjust seasoning if necessary.

              Serve: Ladle the soup into bowls and top with chopped fresh parsley or grated Parmesan cheese if desired.
