Ingredients
  

1 pound Italian sausage (mild or spicy, your choice)

1 medium onion, chopped

2 cloves garlic, minced

3 carrots, sliced

3 celery stalks, chopped

1 can (14.5 oz) diced tomatoes, undrained

4 cups low-sodium chicken broth

1 can (15 oz) cannellini beans, rinsed and drained

1 cup baby spinach

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 tablespoon olive oil

Grated Parmesan cheese for serving

Fresh basil or parsley for garnish

Instructions
 

Brown the Sausage: In a skillet over medium heat, add olive oil. Once hot, add the Italian sausage and cook until browned, breaking it apart with a wooden spoon. Remove from heat and drain excess fat.

    Sauté Aromatics: In the same skillet, add the chopped onion, carrots, and celery. Sauté until they begin to soften, about 5 minutes. Add minced garlic and cook an additional minute until fragrant.

      Combine Ingredients in the Crock-Pot: In your Crock-Pot, add the browned sausage, sautéed vegetables, diced tomatoes (with juices), chicken broth, cannellini beans, dried oregano, basil, red pepper flakes, salt, and pepper.

        Cook the Soup: Cover the Crock-Pot and cook on low for 6-7 hours or on high for 3-4 hours.

          Add Fresh Greens: About 30 minutes before serving, stir in the baby spinach. Allow it to wilt and heat through.

            Serve: Taste and adjust seasoning if necessary. Ladle soup into bowls, and sprinkle with grated Parmesan cheese and fresh basil or parsley for garnish.
