4 boneless, skinless chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon Italian seasoning

2 tablespoons olive oil

1 cup sun-dried tomatoes, packed in oil, drained and chopped

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon dried basil

1/2 cup fresh spinach, chopped

Fresh parsley, for garnish

Prepare the Chicken: Season the chicken breasts with salt, black pepper, garlic powder, onion powder, and Italian seasoning on both sides.

    Sear the Chicken (Optional): In a skillet over medium heat, heat the olive oil. Add the seasoned chicken and sear for 2-3 minutes on each side until golden brown. This step adds flavor but can be skipped if short on time.

      Transfer to Slow Cooker: Place the seared (or raw) chicken breasts in the bottom of your crock pot.

        Make the Sauce: In a separate bowl, combine the sun-dried tomatoes, heavy cream, Parmesan cheese, dried basil, and spinach. Mix until well combined.

          Combine Ingredients: Pour the tomato and cream mixture over the chicken in the crock pot, ensuring that each piece is well coated.

            Cook: Cover the crock pot and cook on low for 6-7 hours, or on high for 3-4 hours, until the chicken is cooked through and tender.

              Serve: Once done, remove the chicken from the crock pot and place on a serving platter. Stir the sauce well, then spoon over the chicken. Garnish with fresh parsley before serving.
