Ingredients
  

1 pound ground beef or Italian sausage

1 medium onion, diced

3 cloves garlic, minced

1 (28-ounce) can crushed tomatoes

2 cups chicken or vegetable broth

2 cups water

2 teaspoons Italian seasoning

1 teaspoon salt

½ teaspoon black pepper

8-10 lasagna noodles, broken into pieces

2 cups ricotta cheese

2 cups shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil or parsley for garnish

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground beef or sausage until fully cooked. Drain excess fat and transfer to the Crock Pot.

    Sauté the Vegetables: In the same skillet, add diced onion and minced garlic, sautéing for about 3-4 minutes until fragrant. Add to the Crock Pot.

      Combine Ingredients: Stir in crushed tomatoes, chicken broth, water, Italian seasoning, salt, and black pepper into the Crock Pot. Mix well.

        Cook the Soup: Cover the Crock Pot and cook on low for 6-7 hours or on high for 3-4 hours, until flavors meld and the soup is hot.

          Add the Noodles: About 30 minutes before serving, stir in the broken lasagna noodles. Cover and continue cooking until noodles are tender.

            Melt the Cheeses: Once noodles are cooked, stir in ricotta cheese and half of the mozzarella cheese. Allow it to melt for about 10 minutes.

              Serve and Garnish: Ladle the soup into bowls, and top with remaining mozzarella and Parmesan cheese. Garnish with fresh basil or parsley before serving.
